$55 Vinaigrette
Ingredients
2 teaspoons Dijon mustard
1 teaspoon garlic, minced (can substitute minced shallot)
1/4 cup red wine vinegar, (can substitute fresh lemon juice)
1-2 teaspoons sugar (to taste, more if you’re using lemon juice)
Salt and pepper to taste (roughly 1 teaspoon of each)
3/4 cup extra virgin olive oil
Blend mustard, garlic, sugar and vinegar together.
In a slow steady stream add olive oil until emulsified. Add salt and pepper to taste, about 1/2 teaspoon each.
Or add all ingredients to mini prep and blend till emulsified.
I named this the $55 Vinaigrette—about 35 years ago, I took a cooking class that cost $55, which was a lot for a class at the time. This vinaigrette is the only thing I took away from it—this very classic, excellent French-style vinaigrette.
I’ve made it a thousand times. Hope you make it and enjoy it too!
