Flank Steak à la MikeMa

Ingredients

  • 1 pound flank steak 

  • 1 tablespoon olive oil 

  • Salt and freshly ground pepper 

  • 3 large cloves garlic, minced or grated 

  • 2 tablespoons fresh ginger, grated 

  • ¼ cup tamari or soy sauce 

  • Splash of balsamic vinegar 

  1. Massage the steak with olive oil, season both sides generously with salt and pepper. Let it marinate for about an hour at room temp, or pop it in the fridge for several hours (even overnight). Just bring it back to room temp before cooking. 

  2. Heat your grill or a cast iron pan until it's screaming hot. If the steak doesn't fit, cut it in half—no big deal. Sear quickly on both sides, about 5 minutes per side over high heat for medium rare. 

  3. Take it off the heat and let it rest on a cutting board for 5 minutes. VERY IMPORTANT: Always slice flank steak across the grain into thin strips, otherwise it is tough. 

  4. We love serving this over rice with lightly sautéed green beans, or broccoli. – throw those veggies into the same  pan the steak was cooked in to absorb that beautiful flavor.
