Chopped Kale Salad ft. The Kimono
Ingredients:
1 bunch of kale, tough stems removed and chopped finely
1/2 head of Napa cabbage, finely chopped
1/2 cup of cilantro chopped
1/3 cup of mint finely chopped
1/2 bunch of scallions, finely chopped
1/2 - 3/4 cup chopped roasted, salted peanuts
4 Tablespoons creamy peanut butter
1 large clove garlic, chopped
1/3 cup seasoned rice vinegar
1 Tbs. soy sauce
1 Tbs. honey
3 Tbs. water
1/4 tsp. crushed red pepper or to taste
A splash of toasted sesame oil
Instructions:
Blend all vinaigrette ingredients in a Mini Cuisinart Food Processor until smooth, you may need to add a little room temperature water to thin it out.
Combine all salad greens in a large bowl, toss with Peanut Vinaigrette, sprinkle with chopped nuts. Taste to see if it needs salt or pepper, probably not, the nuts are salty and I don't think it needs pepper.
