Chopped Kale Salad ft. The Kimono
Ingredients:
- 1 bunch of kale, tough stems removed and chopped finely 
- 1/2 head of Napa cabbage, finely chopped 
- 1/2 cup of cilantro chopped 
- 1/3 cup of mint finely chopped 
- 1/2 bunch of scallions, finely chopped 
- 1/2 - 3/4 cup chopped roasted, salted peanuts 
- 4 Tablespoons creamy peanut butter 
- 1 large clove garlic, chopped 
- 1/3 cup seasoned rice vinegar 
- 1 Tbs. soy sauce 
- 1 Tbs. honey 
- 3 Tbs. water 
- 1/4 tsp. crushed red pepper or to taste 
- A splash of toasted sesame oil 
Instructions:
- Blend all vinaigrette ingredients in a Mini Cuisinart Food Processor until smooth, you may need to add a little room temperature water to thin it out. 
- Combine all salad greens in a large bowl, toss with Peanut Vinaigrette, sprinkle with chopped nuts. Taste to see if it needs salt or pepper, probably not, the nuts are salty and I don't think it needs pepper.
