Chopped Kale Salad ft. The Kimono

Ingredients:

  • 1 bunch of kale, tough stems removed and chopped finely

  • 1/2 head of Napa cabbage, finely chopped

  • 1/2 cup of cilantro chopped

  • 1/3 cup of mint finely chopped

  • 1/2 bunch of scallions, finely chopped

  • 1/2 - 3/4 cup chopped roasted, salted peanuts

  • 4 Tablespoons creamy peanut butter

  • 1 large clove garlic, chopped

  • 1/3 cup seasoned rice vinegar

  • 1 Tbs. soy sauce

  • 1 Tbs. honey

  • 3 Tbs. water

  • 1/4 tsp. crushed red pepper or to taste

  • A splash of toasted sesame oil

Instructions:

  1. Blend all vinaigrette ingredients in a Mini Cuisinart Food Processor until smooth, you may need to add a little room temperature water to thin it out.

  2. Combine all salad greens in a large bowl, toss with Peanut Vinaigrette, sprinkle with chopped nuts. Taste to see if it needs salt or pepper, probably not, the nuts are salty and I don't think it needs pepper.
