Garlic Noodles
Garlic Noodles have a for real fan club! One restaurant in San Francisco makes their Garlic Noodles in a separate room to protect it from stealing eyes. I searched this one online and made a few changes. These go together rather quickly and are nice in warm weather. I hope you try these and become a fan!
Ingredients
8-10 ounces noodles, soba or spaghetti noodles, I prefer the ‘bite’ to a slightly larger pasta called bucatini.
Sauce (Ingredients easily found on the Asian isle at most grocery stores)
2 tablespoon Oyster Sauce
2 tablespoon Soy Sauce
2 tablespoons soy sauce
1 tablespoon dark soy sauce (optional) – If unavailable, substitute with an additional tablespoon of regular soy sauce.2 tablespoon Fish Sauce
2 teaspoon Worcestershire Sauce
1 teaspoon Toasted Sesame oil
1 tablespoon brown sugar
4 tablespoon Butter
6 cloves fresh Garlic - minced`
1/2 cup Parmesan Cheese - grated
1/2 cup Green Onions, thinly sliced
1/4 teaspoon Chili Flakes – optional- to taste
Toasted Sesame Seeds - to garnish (optional)
Recipe
Cook noodles or pasta to al dente according to package instructions (cooking time will vary), depending on what kind of pasta you choose.
While the pasta is cooking, combine the sauce in a small bowl, set aside.
Melt the butter in a large skillet over medium heat. Add the garlic, cook just until fragrant - approximately 30-60 seconds. As always, be careful to not allow the garlic to burn- it becomes bitter when burnt.
Add roughly ¾ of the prepared sauce to the garlic butter and mix well to combine. Add the cooked noodles to the simmering sauce. Gently toss to combine. Remove from heat.
Taste to see if more sauce is needed. (I didn’t use the full amount, and used left over sauce over cooked rice for another stir fry meal.)
If the sauce becomes too thick, add a small amount of water, vegetable or chicken broth, as needed.
Sprinkle with the grated Parmesan Cheese, sliced Green Onions, and Chili Flakes. Gently mix to combine. Top with toasted sesame seeds.
Best served immediately. To make it a main dish add lightly cooked shrimp, chicken or cooked egg. Leftovers are even better heated up the next day.
