Roasted Beets

Ingredients

  • 1- 4 beets

  • Your favorite pickling spices

  • Water

  • Crème Fraiche

  • Horseradish

  1. Preheat the oven to 400 degrees.

  2. Start by wrapping 1-4 beets individually with tin foil. Place beets on a baking sheet and into the oven for 1 hour.

  3. Beets should peel easily at this point. Peel beets under water at the sink, this can be messy! Slice them into 1/4 in pieces.

  4. Make your pickling brine by combining 1/4 water with 1 cup water and your pickling spices to taste. You can multiply this brine recipe depending on how many beets you are using.

  5. Combine with beet slices in a sealable jar and place in fridge. In about 12 hours these will be delicious roasted and pickled beets.

Serving

  1. Serve floated on top of Crème Fraiche or equal parts Crème Fraiche and Horseradish.

  2. Add a side of Arugula with a high quality olive oil drizzle for even more deliciousness.
