Happiness Grain Bowls

Here’s a layering option for you to hitch hike off of – You’re the creator! Let the ingredients dance together.  

Get excited about preparing healthy food because it feels so alive and delicious! 


  1. 🌟The Start: Cooked Jasmine or Brown Rice 

  2. 🌟The Protein: Chickpeas roasted with a bit of curry powder or straight from the can. Alternatively, leftover rotisserie chicken or canned Salmon with a little sesame oil. 

  3. 🌟 Vibrancy: Thinly sliced Cukes, julienne carrots, or very thinly sliced cabbage. These along with fresh herbs, like cilantro and mint to make it sing! 

  4. ✨Top with crushed roasted peanuts or fried shallots if available.

If you like it spicy top with Sriracha or Sambal Oelek for heat🔥 

Peanut -Lime Dressing: 

4 Tablespoons natural Peanut Butter 

2 Tablespoons fresh Lime Juice 

1 tablespoon Tamari or Soy Sauce 

1 Tablespoon honey or date sugar 

1 tablespoon warm water 

Combine all (If you like it spicy add Sriracha.) Taste and adjust.
