The Cowboy Caviar Salad

I’ve made variations of Cowboy Caviar for years, great for BBQs. No need to reinvent the wheel, here’s the link to the NYT recipe I recently came across, and the story behind it. This is how  we transform this from a dip….. to a main course salad.

  1. Make this delicious Cowboy Caviar from the NY Times website, I like to add diced avocado!!

  2. Place the Caviar on your choice of greens.

  3. Don’t forget to add lots of crunchy tortilla chips on top.

  4. Enjoy as a main course salad possibility.
