Peach Cobbler
Ingredients
4 cups peeled and sliced ripe peaches
2/3 cup, plus 3 tablespoons granulated sugar
1 teaspoon lemon zest
1 tablespoon lemon juice
1/4 teaspoon almond extract
1 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter
1 egg, slightly beaten
1/4 cup milk
Vanilla ice cream (Cinnamon)
Preheat oven to 400. Butter an 8x8-baking dish. Arrange peaches in baking dish, sprinkle with 2/3 cup sugar, lemon zest and juice, and almond extract. Bake 20 minutes.
While peaches are baking, place the flour, 1 tablespoon of the remaining sugar, baking powder and the salt in the bowl of your Cuisinart and pulse once or twice. Add the butter and vegetable shortning. Add the milk and the egg and process just until combined, do not over mix.
Remove peaches from oven and quickly drop dough by large spoonfuls over the peaches. Sprinkle with the remaining 2 tablespoons of sugar. Return to the oven for 20 minutes, until top is firm and top is golden brown
Garnish with vanilla ice cream.
