Winter Salads

We love salads… even in the winter! Here is one of my favorites.

Kale Salad with Cranberries and Walnuts

Ingredients

  • 1 large bunch kale, removed from though stems and chopped fine

  • 4 cups arugula

  • ½ cup dried cranberries

  • 1/3 cup chopped kalamata olives

  • ½ cup toasted walnuts (or pine nuts)

  • 1 small sweet red, yellow or orange pepper, chopped

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • ½ teaspoon sea salt

  • Crumbled gorgonzola or feta, optional*

  • Combine all ingredients, this salad keeps for a day, leftovers may just need a little perking up with a pinch of sea salt or a splash of balsamic, the next day.

  • *Toss in cheese just before serving
